Five years ago when I was still working in Adelaide Bank, a colleague of mine always brought delicious ‘hedgehog’ slices made by her Nanna. We asked for the recipe and finally she sent it around to the team. I came across the recipe again in my old emails when I was looking for something simple (and very delicious) to make for the monthly potluck at church. If you don’t know what it is – it’s chocolate slices with biscuit pieces in them. I’m not sure where it got its name from – maybe because of the ‘messy’ look. 🙂 There are a lot of variants – with desiccated coconut, this and that – but I think this simple recipe makes a very yummy treat! So here it is, I’ll share it with you as well.

Granny’s Hedgehog
250g butter
2 eggs
1 tspn vanilla essence
1 pack of biscuits (250g) – I use Arnott’s Milk Coffee biscuits
1 cup of sugar
2 heaped tbspoon of cocoa
1 tbspn of golden syrupMix all ingredients except for the biscuits together in a pan and cook on the stove on low setting until the mixture thickens. Stir continously.
Crush the biscuits into smaller pieces. Add the biscuit pieces into the mixture and pour into a medium container.
Leave in the freezer overnight and slice into smaller pieces to enjoy!
